The Variables of the Morning Brew
Every morning, you follow the same ritual. You weigh the beans, grind them to the same setting, pour the water at the same temperature, and wait. Yet, the coffee in your cup tastes slightly different today than it did yesterday.
This is the beauty and frustration of coffee. It is a living, breathing agricultural product that reacts to everything around it.
The Bean’s Journey

From the moment the bean is roasted, it begins to age. Degassing releases carbon dioxide, which fundamentally alters how water interacts with the coffee grounds. A coffee brewed three days off roast will extract differently than the same coffee brewed two weeks later.
Water Chemistry
Your tap water is not a constant. Municipal water supplies change their mineral composition based on rainfall, season, and source. The ratio of calcium to magnesium directly impacts which flavor compounds are pulled from the coffee grounds.
The Human Element
Finally, there is you. Your palate is influenced by what you ate for dinner last night, how much you slept, and your overall mood. Sometimes, the coffee hasn’t changed at all—you have.
