Irish Coffee

Pre-heating and Sweetening

Warm your stemmed glass with hot water, then discard the water. Add the brown sugar to the empty glass, followed by the hot filter coffee. Stir vigorously until the sugar is completely dissolved.

Adding the Spirit

Stir the Irish whiskey into the sweetened hot coffee. The sugar is crucial not just for flavor, but because it increases the density of the coffee, which helps the cream float later.

Whipping the Cream

Lightly whip the chilled heavy cream just until it thickens slightly, but is still pourable. Do not over-whip it into stiff peaks; it must remain liquid enough to drink through.

The Float

Hold a warm bar spoon upside-down just above the surface of the coffee. Slowly pour the thickened cream over the back of the spoon. This softens the impact and allows the cream to float perfectly on top.

Service

Serve immediately without stirring. The experience relies on drinking the hot, spirited coffee through the cold, velvety cream collar.

Invented in 1943 by Joe Sheridan, a chef at Foynes Port near Limerick, Ireland, the Irish Coffee was originally conceived to warm up freezing, weary passengers arriving on transatlantic flying boats. It has since become a global classic, balancing intense heat, sharp spirits, and rich, cooling dairy.

The architecture of a true Irish Coffee is defined by its distinct layers. A common mistake is using pressurized whipped cream from a can or heavily whipping the cream until it forms stiff peaks. The cream in an authentic Irish Coffee must be only lightly whipped—thick enough to float, but liquid enough to flow easily into the mouth alongside the hot coffee. Furthermore, the brown sugar is not merely a flavor additive; it dissolves into the coffee to alter its specific gravity, creating a dense base that ensures the lighter cream layer rests cleanly on the surface without muddying the beverage.
