Espresso layered over iced tonic water in a tall glass
01

Prepare the Base

Fill your tall glass completely with large, dense ice cubes. Slowly pour the tonic water over the ice, leaving enough room at the top for the espresso.

02

Extract the Espresso

Pull a standard double espresso into a separate small pitcher or shot glass.

03

The Float

To create a clean, distinct layer, slowly pour the hot espresso over the back of a bar spoon or directly onto an exposed ice cube, allowing it to gently cascade and rest on top of the tonic water.

04

Service

Garnish with a citrus twist if desired. Serve with a straw or stirring spoon. The layers must be stirred together by the drinker before consuming.

The espresso tonic is a modern classic that treats coffee more like a botanical ingredient in a cocktail than a traditional morning beverage. The quinine in the tonic water introduces a snappy, dry bitterness that pairs exceptionally well with the bright, acidic profile of a light-roasted, washed African coffee (such as an Ethiopian Yirgacheffe or Kenyan SL28).

The order of operations is critical. If you pull espresso directly into tonic water, the hot coffee acts as a nucleation site for the carbonation, causing an immediate, uncontrollable volcanic foam that will overflow the glass. Extracting the espresso separately and pouring it gently over ice preserves the carbonation and creates a beautiful, stratified visual presentation.
