Café Bombón

A visually striking Spanish coffee pairing exactly equal parts of intense espresso and sweet, dense condensed milk.

The Base Layer

Pour the sweetened condensed milk into the bottom of a small, clear glass. The transparent glass is essential for the traditional presentation.

The Floating Espresso

Extract the espresso. To keep the layers distinct, hold a spoon upside-down just above the condensed milk and gently pour the hot espresso over the back of the spoon.

Presentation

The beverage should now display a stark, beautiful contrast: a bright white layer of dense milk at the bottom and a dark layer of espresso with crema at the top.

Service

Serve immediately with a small stirring spoon. The drinker must thoroughly mix the two layers together before taking their first sip.

The Café Bombón originated in Valencia, Spain, and has since spread throughout Europe and parts of Asia. Translating roughly to “confection” or “candy,” the Bombón is essentially a cortado where traditional steamed milk has been entirely replaced by highly sweetened, dense condensed milk.

The defining characteristic of this beverage is its dual-layer presentation, made possible by the stark difference in liquid density. The heavy, viscous condensed milk naturally settles at the bottom, supporting the lighter espresso floating above. Beyond its striking visual appeal, the Café Bombón offers a very practical, customizable drinking experience. By presenting the drink unmixed, the drinker is forced to interact with their coffee, stirring the two elements together to achieve an intense, syrupy, and dessert-like balance of sweet and bitter.
