Arabic Coffee (Saudi Style)
A culturally rich, light-roasted coffee infused with cardamom and simmered to create a golden, aromatic beverage.

Boiling the Water
Bring the 3 cups of water to a rolling boil in your saucepan or brewing Dallah.
Adding the Coffee
Once the water is boiling, add the coarsely ground light-roasted coffee. Do not stir immediately; let it foam up slightly, then reduce the heat to a low simmer.
The Simmer
Allow the coffee to simmer gently for 10 to 15 minutes. This extended boiling time is necessary to properly extract the dense, lightly roasted beans and develop the beverage's characteristic golden color.
The Spice Infusion
Turn off the heat and let the pot sit for a minute so the coffee grounds can settle. In your serving Dallah, place the crushed cardamom, saffron, and cloves.
Decanting
Carefully pour the brewed coffee into the serving Dallah, leaving the settled coffee grounds behind in the boiling pot. Let the coffee steep with the spices for another 3 to 5 minutes before serving.
Service
Pour small amounts into finjan cups, filling them only about a quarter or third of the way full. Serve alongside dates to provide natural sweetness, as sugar is never added directly to the brew.
Arabic coffee, specifically the style prominent in Saudi Arabia and the Gulf states, is a cornerstone of regional hospitality and social protocol. Visually and sensorially, it bears almost no resemblance to western espresso or filter coffee. It pours as a translucent, golden-green liquid, redolent with the piercing aroma of cardamom and the delicate warmth of saffron.

The coffee beans used are typically high-quality Arabica (often from Yemen or the southern mountains of Saudi Arabia) that are roasted very lightly—sometimes only just reaching the first crack. Because lightly roasted beans are extremely dense and less soluble, the coffee must be boiled continuously for over ten minutes to extract its flavors. The spices are added at the very end of the process, ensuring their volatile essential oils remain vibrant and aromatic in the cup.
