Ristretto
A restricted espresso shot offering a denser, sweeter, and more viscous experience with diminished bitterness.

The Finer Grind
Adjust your grinder slightly finer than your standard espresso setting. You are aiming for a highly restricted flow that extracts only the most readily soluble compounds.
Dosing
Dose your standard 18g of coffee. Distribute and tamp perfectly level to prevent channeling, which is especially critical with finer grinds.
The Restricted Pull
Initiate the shot. The flow will be noticeably slower and more syrupy than a standard espresso. Stop the extraction at a 1:1.5 ratio (around 27g of liquid).
Service
Serve immediately. The crema should be thick and dark, holding tightly to the edges of the cup.
The word ristretto translates directly to “restricted” in Italian. This beverage is crafted by stopping the espresso extraction early, usually around a 1:1 or 1:1.5 ratio of dry coffee to liquid yield. By doing so, you capture the highly concentrated, acidic, and sweet compounds that extract early in the brewing process, while leaving behind the bitter and astringent compounds that require more water and time to dissolve.
A well-executed ristretto should coat the palate with a heavy, velvet-like texture. It is particularly striking when brewed with medium-light roasted single-origin coffees, where it magnifies bright fruit notes and floral aromatics into an intense sensory experience.
