Qahwa with Saffron

Preparing the Saffron

Place half of the saffron threads into a small mortar. Add a tiny pinch of coarse sugar (to act as an abrasive) and grind the threads into a fine powder. Leave the remaining threads whole for visual appeal.

Brewing the Base

Bring the 3 cups of water to a boil in your pot. Add the coarsely ground coffee. Reduce the heat and allow the mixture to simmer gently for 10 to 12 minutes to extract the base flavors of the light-roasted beans.

The Aromatic Steep

Turn off the heat. Let the coffee grounds settle to the bottom of the pot for one minute. Meanwhile, place the ground saffron, whole saffron threads, and crushed cardamom directly into your serving Dallah.

Decanting and Infusion

Carefully pour the brewed coffee into the serving Dallah, leaving the muddy grounds behind. If using rose water, add it now. Seal the Dallah and let the coffee steep for 5 minutes. This allows the hot liquid to activate the saffron's color and volatile aromatic compounds.

Service

Pour the golden liquid into finjan cups, ensuring a few whole saffron threads make their way into each cup. Serve alongside premium dates or light sweets.
