Freddo Cappuccino
A luxurious evolution of the Freddo Espresso, crowned with a thick, structured layer of cold-frothed skim milk.

The Espresso Base
Prepare a Freddo Espresso. Extract the double shot, add sugar if desired, and blend it briefly with a few ice cubes using your drink mixer until frothy and chilled. Pour this over fresh ice in your tall serving glass.
Rinsing the Equipment
Rinse your drink mixer spindle thoroughly. Any residual coffee oils will prevent the milk from foaming properly.
The Cold Macchiato Cream
Pour the 60ml of freezing cold skim milk into a clean mixing cup. Using the drink mixer, aerate the milk for 10 to 15 seconds until it transforms into a dense, velvety, meringue-like foam.
The Crown
Carefully scoop or gently pour the cold milk foam over the iced espresso base. The structured foam will sit cleanly on top, creating a beautiful, distinct layer. Serve with a straw.
The Freddo Cappuccino represents the height of Greek iced coffee culture, elevating the robust Freddo Espresso with a luxurious, textural crown of cold milk foam (often referred to locally as afrogala).

The secret to a flawless Freddo Cappuccino lies entirely in the milk chemistry. Counterintuitively, skim (non-fat) milk produces the thickest, most stable cold foam. Fat inherently destabilizes cold foam structures. By using extremely cold, fat-free milk and whipping it aggressively with an electric spindle mixer, you introduce a massive volume of air into the protein structures, creating a stiff, pillowy topping. As you drink through the straw, moving it up and down, the sweet, heavy foam gradually melds with the dark, intense espresso below.
